2 Ingredient Malai Ice cream

 

 

My kids are loving this ‘ice cream making’ phase. Bangalore has started to feel like a furnace and ice creams are what one craves for while lazing in the afternoons. You are sure to enjoy this creamy delight.

A simple no churn creamy dreamy ice cream with just 2 ingredients.

  1. Take chilled malai and whip it until soft peaks appear [ or till it becomes an even creamy mix].
  2. Beat in the condensed milk until it combines uniformly.
  3. Pour into an ice cream tray.
  4. Cover and seal with aluminium foil. [ This prevents ice crystals from forming ]
  5. Keep it in the freezer.
  6. After about 2 hours, when the ice cream is semi-set, beat it well with a balloon whisk/ fork. Cover with the aluminium foil and put it back in the freezer.
  7. Repeat the above step 2 more times with an interval of one hour in between.
  8. Allow the ice cream to set for 2 hours.
  9. Your yummy creamy ice cream ready.
Recipe Notes

The freeze- beat- refreeze step is very important to get a creamy result.

The ice cream tray must always be sealed well with the aluminium foil while placing in the freezer. Formation of ice crystals will spoil the texture of the ice cream. The aluminium foil helps to avoid this.

This is a very basic recipe. It tastes great as it is, but you can also add flavours of your choice like- nuts, raisins, chocochips, cardamom etc.

I store the malai ( the fat layer that forms on top of boiled and cooled milk) on a regular basis in the freezer. I usually collect it to make homemade butter and ghee. This time I decided to use it to make this yummy ice cream. The result is superb. Beat or whip the malai when it is really cold. But be careful not to over beat it or the butter would get separated.Substituting the malai with store bought fresh cream will not give the same result or flavour.
