Home made ice creams taste heavenly and are super easy to whip up. This yummy blackcurrant ice cream uses just 3 ingredients and all you need to do is mix them all up and freeze. Easy right?

Dad and I always ordered the pretty mauve coloured blackcurrant ice cream. I doubt if we liked the flavour as much as we loved the colour. This one’s for you pa.

Instructions
  1. Beat the cream, condensed milk and blackcurrant crush together until it gets blended uniformly. [You may do this with a balloon whisk or using an electric mixer].
  2. Check for sweetness and flavour. Add a little more crush if you like a stronger flavour and for a more prominent colour. [You may add raisins or dried currants to the ice cream mix at this point]
  3. Pour into an ice cream tray. Cover and seal with aluminium foil.
  4. Keep it in the freezer for 2 hours.
  5. Using a ballon whisk beat the semi frozen ice cream mix well.
  6. Cover and seal with the aluminium foil and keep the tray back in the freezer.
  7. Repeat step 5 two more times with a gap of one hour in between.
  8. Freeze for about 4-5 hours and your creamy blackcurrant ice cream is ready to be served.
Recipe Notes

I used 2 cups of malai [the fat layer that forms on top of boiled and cooled milk] for this ice cream. In case you use the same it is important to beat the malai well to get a homogeneous ice cream mix.

The freeze-beat-refreeze repeat step plays the most important role to give our ice cream its creamy texture.

The aluminium foil helps to prevent the formation of ice crystals [which would otherwise spoil the texture of our ice cream]. It is thus important to make sure that the ice cream tray is covered and sealed well every time you place it in the freezer.

I used Mala's Blackcurrant Crush for the above recipe. You may use any brand of your choice . [ In case you don't get the crush you can substitute it with blackcurrant jam ]
