I like it best when I end up making something really tasty without actually planning and preparing for it. Seeing the over ripe avocados , I was thinking on the lines of a sorbet or a regular ice cream. But that coconut milk carton caught my eye and here we are with this super yum vegan dessert.
Avocado and coconut are like a match made in heaven. The ice cream feels so creamy and has this delicious subtle coconut flavour. I loved it.

#3 Ingredient Vegan Avocado Ice Cream
Easy vegan avocado ice-cream!
Remove the pulp from the ripe avocados and blend it with the coconut milk and the powdered sugar until well combined.
Taste the ice cream mix to check the sweetness. [You may add more sugar if you like it sweeter]
Pass the mixture through a sieve. This will get rid of the brown/black fibers, often found in ripe avocados and also helps to remove any lumpy bits.
Using a hand mixer or a balloon whisk beat the ice cream mix well. [for about 10 minutes]. If you do this over an ice bath it is even better.
Pour into an ice cream tray or a regular baking tin. Seal with aluminium foil and freeze for 3-4 hours.
Your creamy avocado ice cream is ready to be served.
- The avocados used must be nice and ripe to get a nice creamy texture in your ice cream.
- Sometimes over ripe avocados tend to have a darker [blackish] layer inside. Before scooping off the pulp for the ice cream, scrape out this layer. This way your ice cream would have that lovely green colour.
- Passing the ice cream mix through a sieve is another important step. Those black brown fibers would ruin the pretty green colour of your ice cream. Do make sure that you don't skip this step.
- This ice cream can also be made with regular fresh cream or whipping cream. But I really think the combination of the coconut milk and avocados is perfect. So do give it a try.
