I like it best when I end up making something really tasty without actually planning and preparing for it. Seeing the over ripe avocados , I was thinking on the lines of a sorbet or a regular ice cream. But that coconut milk carton caught my eye and here we are with this super yum vegan dessert.

Avocado and coconut are like a match made in heaven. The ice cream feels so creamy and has this delicious subtle coconut flavour. I loved it.

Easy no-churn 3 ingredient Vegan avocado Ice-cream. A healthy dessert to beat the heat. Home made ice creams taste so yum.
Instructions
  1. Remove the pulp from the ripe avocados and blend it with the coconut milk and the powdered sugar until well combined.
  2. Taste the ice cream mix to check the sweetness. [You may add more sugar if you like it sweeter]
  3. Pass the mixture through a sieve. This will get rid of the brown/black fibers, often found in ripe avocados and also helps to remove any lumpy bits.
  4. Using a hand mixer or a balloon whisk beat the ice cream mix well. [for about 10 minutes]. If you do this over an ice bath it is even better.
  5. Pour into an ice cream tray or a regular baking tin. Seal with aluminium foil and freeze for 3-4 hours.
  6. Your creamy avocado ice cream is ready to be served.
Recipe Notes
  • The avocados used must be nice and ripe to get a nice creamy texture in your ice cream.
  • Sometimes over ripe avocados tend to have a darker [blackish] layer inside. Before scooping off the pulp for the ice cream, scrape out this layer. This way your ice cream would have that lovely green colour.
  • Passing the ice cream mix through a sieve is another important step. Those black brown fibers would ruin the pretty green colour of your ice cream. Do make sure that you don't skip this step.
  • This ice cream can also be made with regular fresh cream or whipping cream. But I really think the combination of the coconut milk and avocados is perfect. So do give it a try.

    I cant get a nice ripe avocado.. I get under ripe or over ripe how to check good avocado

    I usually get under ripe ones and leave them to ripen for a couple of days. Once they turn nice and soft when slightly squeezed from outside, I use them.
