Aam Panna Sorbet

After making a variety of ice creams and popsicles, I decided on trying some sorbet. Sorbet is a frozen dessert made of fruit, sugar and water. It is close to our desi ‘gola’ in texture but fruit based.

The mango season is almost here and when I got a couple of raw mangoes to make ‘Aam panna’ I decided to give it a new avatar. Icy, tangy and sweet ,this aam panna sorbet is perfect for chilling in the hot summer afternoons.

Aam Panna Sorbet
  1. Wash the mangoes and pressure cook them for 2 whistles.
  2. Allow to cool completely.
  3. Peel the outer skin and scoop out the entire pulp.
  4. Mix all the ingredients together and give it a churn in an electric mixer.
  5. Check the taste to add more sugar if needed.
  6. Beat well until the ingredients are well combined. [you may do this manually or with an electric mixer]
  7. Pour into an ice cream tray and freeze for 2 hours.
  8. Use a fork to mix the semi frozen sorbet a couple of times. Freeze again.
  9. Repeat the above once more, after an hour. Allow to freeze for a couple of hours more.
  10. Serve the frozen icy aam panna sorbet. [You can garnish it with some mint leaves and sprinkle some chat masala on top too]
