The simpler a dish, the more I am drawn to it. This is the kind of dessert that you can whip up in no time for sudden visitors. Use some fancy ramkins or molds to make this humble pudding look elegant and attractive.

Instructions
  1. Mix the veg gelatin powder and water. Set aside for 2-3 minutes.
  2. Mix the coconut milk, sugar, almond milk powder, turmeric together in a thick bottomed pan.
  3. Mix the corn flour and milk together. Add this to the above mixture.
  4. Place over medium heat.
  5. Add the bloomed veg gelatin once the mixture is warm.
  6. Bring the pudding mix to boil . Stir continuously.
  7. Simmer on low heat for 4-5 minutes or until the mixture starts to thicken [stir continuously].
  8. Pour into greased ramkins or cupcake molds.
  9. Allow to cool down for about 10 minutes before refrigerating .
  10. The pudding takes about 15-20 minutes to set .
  11. To unmold the pudding loosen the edges using a blunt spatula and invert carefully over a dessert plate. Or you can serve them as it is in the ramkins itself. Serve chilled.
Recipe Notes

The setting time can be reduced by placing the pudding in the freezer compartment. I did this and my puddings were ready in no time.

While preparing the pudding mix, do make sure to stir continuously to avoid lumps.

You can use a few strands of saffron to enhance the colour and flavour of this simple dish to make it more festive.

    If I use the other gelatin powder will the measure be same?…. Second , after adding gelatin if we are heating should we be extra careful?
