I wonder what I love most about this ‘Almond Milk Cake’. Is it  its fantastic texture ? Or is it because it is yet another super simple recipe? Or that I finally, finally got a perfect cake out of my bundt tin!

I think it is the third reason that got me really excited. My mum got me this gorgeous Nordicware bundt tin last summer. And after two failed attempts , it seemed almost impossible for me to get an eggless perfect bundt cake!

I recently baked an eggless butter cake. I love the structure of this cake. So I knew my next bundt cake attempt has to be a butter-based cake. How right was I? This badam milk cake is wholesome and flavourful.

Eggless whole wheat almond milk cake -A moist and flavourful snack cake .This 'badam milk' bundt cake is wholesome and absolutely yum.
Instructions
  1. Pre heat the oven at 180 degrees for 10 minutes.
  2. Sieve the whole wheat flour and baking powder together 8-10 times and set aside.
  3. Mix the milk, butter, sugar and almond milk powder in a thick bottomed pan .
  4. Place over medium heat.
  5. Allow the butter to melt completely and stir well to dissolve the sugar. Turn off the heat.
  6. Add the warm liquid and almond extract into the sieved flour and fold in until no lumps remain.
  7. Pour the cake batter into a generously greased 9 inch bundt tin . [You may use two 8 inch round tins too]
  8. Bake in the pre heated oven at 180 degrees for 45-50 minutes or until a skewer inserted comes out clean.
  9. Allow to cool for 10-15 minutes before carefully inverting over a wire rack.
  10. Slice the cake once completely cooled.
Recipe Notes

 

I have used store bought almond milk powder which has added sugar. In case you make your own, you may adjust the sweetness by increasing amount of sugar in the recipe  by 1/8 cup.

This cake can also be made with all purpose flour or a combination of all purpose flour and whole wheat.

I have used cane sugar in the above recipe. Cane sugar adds a lovely flavour of its own and is not too sweet either. In case you use regular white sugar you may reduce the quantity of sugar in the recipe to 1 cup.

If you are using a bundt tin, greasing it generously with butter is very very important. This helps to remove the cake from the tin easily.

This recipe may be halved and will yield a gorgeous 8 inch almond milk cake. In this case the baking time may be anywhere between 30-40 minutes.

Sieving is a key step specially for a whole wheat cake. This helps to mix the baking powder and flour  plus helps the cake to rise well. [A trick I learnt from my mum and I swear by]

  • Hi, if and when we put the batter in 2 tins,how do we place them? Wait for 1 to get done and then the next one? I have a Samsung Microwave and I bake in the convection mode. Thanks

  • I tried this cake with whole wheat.. Came out dense than the normal cakes.. Is it because of wheat.. I did sieve the flour 10 times..

      Wholewheat is definitely denser than regular all purpose flour based cakes. Besides sifting the flour well , it is important to use fresh baking powder/soda, not over mix the batter and to not open the oven door/ check on the cake too soon.
