Crunchy savoury rice crackers with the flavours of India
Spicy rice crackers flavoured with traditional Indian spices and condiments. Biryani crackers are an excellent gluten free snack option.
It has been a while since I have posted something. ‘Morphyandme’ enjoyed a nice long break but now it is time for some action. What better way than starting off with something that is very us- simple, innovative and yum.
I made these biryani crackers for Ovenderful mom bakers community‘s second anniversary contest. They turned out so pretty and tasty that I had to share it with you.
These crunchy Biryani crackers are gluten-free and have no baking powder or baking soda. These are inspired from the Japanese rice crackers “senbei’. To suit our Indian palate I decided to add loads of aromatic spices and condiments. This is the story of how the humble biryani got a funky makeover and turned into ‘Biryani Crackers’.

You can of course customise these rice crackers with your favourite flavours. I love that about such recipes, the sky is the limit and you can let your imagination go wild. Go get started and tell me what you come up with.

Biryani Crackers/ Rice Crackers
Crunchy rice crackers with the flavours of biryani.
Heat the butter in a thick bottomed vessel, over a low flame
Add all the whole spices and stir fry for a minute or two.
Mix in the ground spices and the ginger garlic paste and fry for another minute stirring continuously.
Turn off the heat and close with a lid. Let this spicy mix rest for about 45 minutes to an hour.
Sift the salt and rice flour together.
Remove the bay leaf, cardamom peels, cloves,mace and cinnamon stick from the spicy butter.
Mix in the cooked rice and sifted rice flour.
Bring the mixture together and knead into a firm dough. [You may add water if needed. This depends on how moist or dry your cooked rice is]
Pre heat the oven at 180 degrees for 10 minutes.
Roll out the dough and cut out desired shapes.
Place in a baking tray lined with parchment and bake at 150 degrees for 15-20 minutes until they turn light brown and crisp.
[baking time depends on how thick or thin your crackers are]

1. Avoid over baking, since the crackers may then turn 'hard' .
2. I used plain rice. But you can enhance the flavor by cooking the rice with - saffron/ vegetable stock/ with the whole spices or use 'biryani' itself.
3. The choice and quantity of the spices can be altered to suit your taste buds.
4. I think I would love to add some crispy caramelized onion slices next time. Fry these along with your spices and add them to the cracker dough.
