I like it best when I end up making something really tasty without actually planning and preparing for it. Seeing the over ripe avocados , I was thinking on the lines of a sorbet or a regular ice cream. But that coconut milk carton caught my eye and here we are with this super yum vegan dessert. Avocado and coconut are like a match made in heaven. The ice cream feels so creamy and has this delicious subtle coconut flavour. I loved it. After the success of my Mascarpone Ice cream, I was quite confident about this one. This ice cream has a nice rich texture and is not too sweet. And no not ‘cheesy’ either. I honestly made this to finish up the last bit of the cream cheese and mascarpone cheese lying in my fridge. Plus I din’t really feel like putting too much effort. So all I did was blend all the ingredients together and freeze , yay you got some yummy cold dessert. Notes-
