Ah how i love baking cookies. And these were so much fun too. All you need is, two butter cookie dough’s and a little time on hand. Adorable aren’t they? Let’s get baking then.

Instructions
  1. Basic butter cookies- Cream the butter and sugar together, until it turns light and fluffy. Add the flour and bring it together into a soft dough. Set aside.
  2. Chocolate butter cookies - Sift the flour and cocoa powder together. Cream the butter and sugar well. Add the sifted flour and bring into a soft workable dough.
  3. Making the checker board cookies - Take a large lemon sized ball of the dough and roll it into a cylinder. Place it on a lightly floured flat surface and gently pat it into a slightly rectangular shape. Make 4 such rectangles from each of the cookie dough.
  4. Arranging- Place one white rectangle and one chocolate rectangle adjacent to each other. Gently press them together, so that they join at the center. Place alternate colours on top and repeat until all the shaped dough is used. [ We now have a rough cuboid shaped dough]
  5. Mix the remaining dough [both white and chocolate] and divide into 4 parts.
  6. Roll out each part into a rectangle to cover each face of the dough.
  7. Wrap with a cling film or parchment and refrigerate for half an hour.
  8. Pre heat the oven at 180 degrees for 10 minutes.
  9. Using a sharp knife cut neat square cookies.
  10. Place on a greased and lined baking tray.
  11. Bake in a preheated oven at 150 degrees for 10-12 minutes or until the edges start to turn light brown.
  12. Remove from the oven and after 5 minutes transfer onto a cooling rack.
  13. Store in an air tight jar once completely cool.

You can choose a mix of various healthy flours to make these cookies too.

Adding vanilla essence is optional for the plain butter cookie dough. I din't use it.
