Crispy Baked Okra

We often visited this Gujarati restaurant called Gramin and i always ordered their special ‘tawa bhindi’. These were crispy , tangy, chat-pat and full of flavour. Last week i happened to come across a recipe on the blog -healthy food desi videsi, that reminded me of those yummy lip-smacking crispy fried okra. I love the fact that these are baked, yet give the same feel as the fried ones. Totally worth it. So here’s your starter for the next party.

  • 15 / Bhindi OkraLadies finger / -
  • 1/4 tsp Chilli powder -
  • 1/4 tsp Turmeric -
  • 1/4 tsp Heeng Asafoetida / -
  • 1/4 tsp Dhania Coriander powder / powder -
  • 1/4 tsp Jeera Cumin powder / powder -
  • 1/4 tsp Amchur mango powder / dry -
  • 1/2 tsp Salt -
  • 1 tsp Cornflour -
  • 1 tsp Olive oil -

Instructions
  1. Wash and pat dry the okra.
  2. Slit each okra, lengthwise into 4 pieces.
  3. Remove the seeds in case they are big. Tap the sliced okra to remove any loose seeds.
  4. In a bowl mix all the spices, salt and cornflour.
  5. Add the okra slices and mix well.
  6. Add the olive oil and give it a good mix.
  7. Allow to marinate for 2 hours.
  8. Grease and line a baking tray with parchment paper. Grease the parchment paper also.
  9. Pre heat the oven at 180 degrees for 10 minutes.
  10. Arrange the okra slices in a single layer on the greased parchment.
  11. Bake at 160 degrees for 10 minutes.
  12. Remove from oven and give it a mix [ so that the okra gets evenly baked all over].
  13. Bake again for 8-10 minutes at 160 degrees.
  14. Repeat step 12 and bake one final time for 4-5 minutes.
  15. Eat them hot or at room temperature.

Notes-

Choose tender and small sized okra's for best results.

You can use spices and masalas based on your taste buds.

The original recipe used besan / gram flour. I used cornflour instead. This helps in getting a crisp outer and also to get the spices to stick to the vegetable.
