Eggless Cheesy Palak Paneer Quiche

My first Quiche ! I have been wanting to bake one for ages but never found an easy eggless recipe. This one is adapted from a recipe I found online. I know it isn’t perfect looking, but it sure tastes yum.

  1. For the pie base- Sift the whole wheat flour, jowar flour, powdered oats , powdered groundnuts and salt together.
  2. Add the cubed butter and mix until well combined. You will now have a bread crumb like mixture.
  3. Add the cold water and curd . Knead into a soft dough. Allow to rest for 15 minutes to half an hour. [ You can either cling wrap it or simply keep it in an air tight container. There is no need to refrigerate if you are going to use it immediately]
  4. Grease and line a pie mold [or any loose bottomed baking dish] . Let the parchment paper hang over the edges a little, this will help you unmold the quiche easily.
  5. Preheat the oven at 180 degrees for 10 minutes.
  6. Roll out the dough [about 1/4 inch in thickness] . This dough isn't the same as an all purpose flour one. So rolling out might be a little tricky. Use the back of a large plate to roll out the base on. Loosen it with the help of a spatula and invert it over the greased and lined pie mold.
  7. After placing the base on the pie mold press it down gently and along the sides too. Remove any extra bits of dough hanging over the edges.
  8. Using a fork, prick the entire surface. Bake in the preheated oven at 160 degrees for 20 minutes .
  9. Remove from the oven and allow it to cool. [Do not unmold]
  10. For the filling - Heat 1/2 tsp of oil in a pan and saute the chopped spinach until it cooks well and turns quite dry.
  11. In another pan heat 1/2 tsp of oil add chopped onions and the ginger garlic paste. Fry the onions until they turn light brown. Add the chilli powder, coriander powder and salt. Fry for 2 minutes. Add the cooked spinach and the cubed paneer pieces. Cook on a low flame for about 2-3 minutes. Turn off the heat.
  12. Creamy sauce-Blend the milk, grated paneer and cream together in an electric mixture until you get a uniform creamy sauce without any lumps.
  13. Arranging the Quiche- Sprinkle a layer of grated cheddar over the base [about half the quantity]. Spread the palak paneer over it. Top this with another layer of cheddar. Pour the white sauce. Finally top with grated mozzarella cheese. [ Do not fill the pie crust upto the brim. Leave about 1/4-1/2 inch of free space above. Or the filling might over flow while baking]
  14. Bake at 160 degrees for about 20-25 minutes [or until the top starts to brown / brown specs start appearing].
  15. Allow to cool for about 15 minutes.
  16. Remove the base of the pie mold and slice your yummy cheesy palak paneer quiche.
Recipe Notes

Notes-

The base can be prepared with all purpose flour. But that's usual isn't it? Do try a healthier mix of flours, it tastes lovely.

The oven temperature and time may vary. Bake the pie crust until it turns a light brown on top and the filled quiche until light brown specs start to appear on top.

Take care not to add more salt specially in the filling. A little less is always better.

If you want to lower the fat content- skip the cream and cheese in the recipe and use low fat milk.
