I hadn’t baked a cake for ages. My new KitchenAid muffin pan was waiting to do its magic and here’s the yummy result.

Baking definitely puts me in good spirits and there was something magical about those tiny cupcakes fluffing up in the oven.  I love easy quick recipes and this one is my new found favourite. I mean seriously, imagine you have guests and you can serve them freshly baked cake by the time they finish up their first round of tea. A keeper this one.

Utterly butterly delicious eggless vanilla cupcakes. These light and spongy cupcakes are super easy to bake too and get done in less than 30 minutes
Instructions
  1. Pre heat the oven for 10 minutes at 180 degrees.
  2. Sift the flour and baking powder together.
  3. Cream the butter and sugar using a hand mixer or a manual whisk until it turns smooth and fluffy.
  4. Add the sifted flour and milk.
  5. Fold in the dry ingredients until just combined and no lumps remain.
  6. Pour into cupcake molds, lined with paper liners, filling each about 2/3rds full.
  7. Bake in the pre heated oven at 170 degrees for 17-20 minutes or until a skewer inserted comes out clean.
  8. Transfer to a wire rack and allow to cool completely.
  9. Enjoy your cupcakes just like that or decorate them with your favourite frosting.
Recipe Notes

I used a hand mixer to prepare the cake batter. But a manual whisk or a couple of churns in your electric mixer does a fab job too.

Creaming the butter and sugar , sifting the flour and baking powder are the two important steps in  this recipe. Both the processes help making the cupcakes light and spongy.
