When I had guests over for dinner last week, I knew that I wanted to ‘bake’ something. I haven’t been baking for a while and any reason to bake gets me excited. Since I already had an elaborate menu planned, I wanted something that was simple and needed no effort from my end.

These wholewheat eggless chocolate chip muffins were the perfect answer. Even my kids can make these cute little muffins jeweled with chocolate chips, yes this really is such an easy breezy recipe.

I love using cane sugar. It adds an earthy flavor of its own and is perfect to mask the wheaty taste . These eggless wholewheat chocolate chip muffins are so moist and biting into those tiny bits of almost melted chocolate chips is such an amazing feeling.

These eggless wholewheat chocolate chip muffins are such a treat and super quick to bake too. An easy recipe for first time bakers.
Instructions
  1. Pre heat the oven at 180 degrees C for 10 minutes.
  2. Line the muffin pan with cupcake liners and set aside.
  3. Sift the flour, cane sugar and baking powder together in a large mixing bowl.
  4. Add the milk and oil .
  5. Mix the ingredients until just combined.
  6. Fold in half the chocolate chips into the batter.
  7. Using a spoon / ice cream scoop add equal amounts of the batter into the muffin pan.
  8. Sprinkle the remaining chocochips over the batter.
  9. Bake in the pre heated oven at 170 degrees C for 17-20 minutes or until a skewer inserted comes out clean.
  10. Transfer to a cooling rack after 10 minutes.
  11. Serve warm or at room temperature. Store them in an air tight container once they are completely cooled.
Recipe Notes

Oven temperature and time may vary.

You may use all purpose flour or a combination of whole wheat and all purpose flours too.

These chocochip muffins taste best when served warm and fresh out of the oven. I love the almost melted chocolate bits while biting into the muffins.

In case you serve them later, keeping them in a warm oven for 5 minutes will do the trick.

This is quite a basic recipe and you can do a bit of mix and match to suit your tastebuds, Add nuts / berries instead of chocochips or use a combination of other healthy flours.

I love using cane sugar and in this recipe it definitely adds to the flavor. You can use other varieties of brown sugar or regular powdered sugar too.

Simple and easy , just the way baking really is.
