Minty Ginger Lime Ice Pops

For once I am looking forward to the summer this year. These minty lemony ice candy’s are super cooling and refreshing. I also freezed some in ice cube trays and the kids are thoroughly enjoying these.

Minty Ginger Lime Ice Pops
For once I am looking forward to the summer this year. These minty lemony ice candy's are super cooling and refreshing. I also freezed some in ice cube trays and the kids are thoroughly enjoying these.

  1. Peel and grate the ginger [or like me, simply pound it with a mortar].
  2. Keep the water to boil and add the grated ginger. Boil until the water gets a light brown hue of the ginger. Remove from heat.
  3. Add the mint leaves and close with a lid. Set aside for 10 minutes.
  4. Strain the liquid.
  5. Squeeze in the lemon juice and mix in the honey.
  6. Allow it to cool before pouring into ice cube trays or popsicle molds.
  7. Freeze for about 2 hours and enjoy these yummy frozen treats.

Notes-

Adjust the sweetness by adding a little more or less honey to suit your taste buds.

You can add a few fresh mint leaves while freezing the ice pops, to give them a little colour.
