There are times when my kids say ‘Amma we want something interesting to eat’. These crispy mozzarella bites filled with melted stringy cheese was a definite winner.
I have been hooked to Masterchef Australia lately. I particularly enjoyed the technique Marco Pierre White used to make the perfect arancini.
I did something similar to get a lovely crisp coat on my cheese cubes. Guess what, it totally worked and there was hardly any mess.
And that’s my 3 year old trying to figure out how much the stringy cheese would stretch. This one is total fun recipe – for the mommies and the kids alike.
Easy cheesy bites!
Fill the first with the all purpose flour.
Mix the cornflour and water together into a thick paste. Add a little water at a time until you get a thick uniform consistency. Pour this into the second tray.
Keep the cornflakes/ breadcrumb mixture in the third tray.
Toss the cheese cubes in the all purpose flour first.
Transfer them into the tray with the cornflour paste. The cheese cubes must then be evenly coated with the cornflour mix. [You may either use your hands to dip them in it or simply toss them in and shake the tray until they look fairly coated with cornflour]
Now finally they need to be coated with the crunchy cornflakes / breadcrumbs. Place the cheese cubes in the third tray and move the tray back and forth until the cheesy bits look all covered in the cornflakes mixture.
Repeat step 5,6 and 7 two or three times until the cheese cubes are well coated.
Refrigerate for 1/2 an hour.
Toss one final time in the cornflakes mixture and deep fry until the outer turns nice and crisp. [You should be careful not to overdo it or the cheese would start to ooze out]
Place them on paper towels to remove excess oil, sprinkle some chat masala and serve.
- In case you aren't comfortable with the idea of deep frying you may try either baking, shallow frying or air frying these cheesy bites. [I definitely want to try these in my new air fryer and I am pretty sure they will turn out perfect]
- I used cornflakes for the crusty coating. You may use breadcrumbs or a mixture of both.
- These need to be served immediately. You can always prepare the coated cheese cubes and refrigerate them and fry them just before serving.
