Multi-grain Date and Seed Granola Cookies

These power packed super healthy cookies were made specially for my house help Lakshmi. I wanted to bake something that is nutrient rich, healthy, filling and tasty. This fits the bill perfectly.

This is a perfect snack to take care of those hunger pangs.  Filled with oats, sesame, dates, peanuts, jaggery and more, these cookies are soft, crunchy and chewy at the same time.

Instructions
  1. In a large bowl mix all the ingredients except the butter.
  2. Once well mixed, add the butter and bring the mixture into a workable dough.
  3. Set aside for 10 minutes.
  4. Grease and line a baking tray.
  5. Pre heat the oven at 180 degrees for 10 minutes.
  6. Shape and place the cookies on the baking tray. [ keep them a little apart, since they tend to expand while baking].
  7. Bake in the pre heated oven at 150 degrees for 10-12 minutes or until the lower edges start to turn light brown.
  8. Remove from the oven.
  9. After about 15 minutes, transfer on to a wire rack to cool completely.
  10. Store in an air tight container.

Notes-

Oven temperature and time may vary. Bake the cookies until the lower edges start to turn light brown.

The jaggery must be powdered well and without any lumps.

In case you do not have all the flours mentioned, it is ok. Just make up the total quantity added, with what you have.

I used regular quaker oats. You can use any oats of your choice. There is no need to powder it.

The peanuts used must be roasted well. These add a lovely crunch to the cookie.

You can also add other healthy seeds and nuts in the above recipe.
