Omum Biscuit/ Ajwain Savoury sticks

 

 

If you are a regular to any old traditional bakery, you would definitely be familiar with this. My mom was visiting me today and i know this is one of her favorites. Crunchy, sweet, salty and full of flavour, a bite of it takes you back in time . A cup of my special ginger tea, these biscuits, mom and me chatting, and Bangalore’s cool weather. Picture perfect isn’t it??

Omum Biscuit/ Ajwain Savoury sticks
Ajwain / Carrom seed savoury sticks are a perfect accompaniment with your evening cuppa.

  1. Powder the sugar, carrom seeds/ajwain and salt together.
  2. Cream the butter and the powdered mix [ prepared in the previous step] together, until the butter turns light and fluffy.
  3. Sift the whole wheat flour and add to the creamed butter.
  4. Combine and knead into a soft dough.
  5. Take lemon sized ball of the dough and roll it into a  thin cylinder on a lightly dusted surface. Repeat with the rest of the dough. Cut the length of each 'stick' as required.
  6. Arrange in a flat container and refrigerate for 20 mins.
  7. Pre heat the oven at 180 degrees for 10 mins.
  8. On a greased and lined baking tray carefully arrange the ' ajwain sticks'.
  9. Bake at 150 degrees for 10 mins [ until the lower edges just start to brown].
  10. Cool for 5 mins and carefully turn them over. Bake the other side at 150 degrees for 5 mins.
  11. Allow to cool completely and store in an air tight jar.
Recipe Notes

1. Oven temperature and time may vary. Check for the edges to turn light brown to know when the biscuits are ready.

2. You can also shape them into regular cookies. They turn out equally good.
