Orange Peel Powder

This is exactly as it sounds – dried and powdered orange peels. I am experimenting with natural colours and flavours , specially for bakes. So after the beetroot powder success, oranges caught my interest. The recipe is super easy and the result is quite satisfying.

  1. Peel the oranges and use the fruit for any other recipe.
  2. Take the orange peel and remove any white fibers present on the inner surface. Scrape out the inner white portion using a scraper, as much as possible.
  3. Sundry the orange peels until they lose all moisture and start to feel 'crisp'. [ it took me two afternoons to get the peels dried completely.]
  4. Grind into a fine powder, sieve and store in an airtight jar.

Notes-

Use ripe oranges and not the green ones. I found the orange coloured peels less bitter.

Religiously scrape out the white inner portion, as much as possible, in order to reduce the bitterness. If you find the peels too soft , you may do this after an hour or two of  sun-drying too.

I used this in a cake today and rest assured you won't get a 'bitter' after taste, if added in the right amount. I found that it gave my cake an excellent 'orangish' aroma.
