“When a bunch of enthusiastic members of Ovenderful Mom Bakers Community met at a quaint café about 2 years ago, I remember this particular lady introducing herself as a “Complete Non-Baker”. It was in a matter of months that this self-proclaimed non-baker became the queen of healthy baking -what with her experiments with barley flour, ragi and coconut sugar. Her love for dark chocolate definitely played a key role and you will know why, once you see what she’s baked for Morphyandme.
Sapna happens to be one of my favourite people for several reasons. But before I start off my “I love Sapna ” saga , which by the way is quite a story on its own, let’s enjoy her super duper Rich Chocolate Cake.”

I have always been wanting to bake a chocolate rich cake for quite sometime now. When I say rich, I do not mean rich with frostings but rich with ingredients. And lots of chocolates during the preparation…layered with chocolate chunks.
How tempting it sounds!
Yeah,sounds heavenly and I always say,”If there are no chocolates in heaven,I am not going…the dark,decadent ones in particular!” 😉
Now making this healthy is the actual icing on the cake because I can relish an extra slice without thinking much about the cream,frostings and fat.
And as I write this post, I am looking at a slice of this cake sitting on a plate right in front of me and I am like,”Control yaar!… Atleast till you finish writing this one.”
How can you? I can see the half melted chocolate piece on the cake staring at me!
I need to get over this for clarity of mind… I will be back! :p
Ok, lets start again. This one is special because I have added chopped nuts(walnuts,almonds and cashew),dark raisins and made with combination of wholewheat and barley flours.
The chocolate part? Wait till you hear this one.
Melted one whole bar of orange flavoured dark chocolate pieces(with dried orange peels) along with butter and one whole bar of dark chocolate pieces,sprinkled it generously in two layers along with chocolate chips. Decadent!
The texture of the cake batter is like chocolate sauce,slightly thicker. So when you are preparing this batter, you need to judge the liquid consistency before adding the final batch of flour mixture. We need this consistency so that the batter spreads smoothly when you pour it into two layers,similar to a marble cake.
This is an egg based recipe. I have used 200 ml cup for solid and liquid measurements. Its easy and hassle free for me.

Rich Chocolate Cake | Choco Nuts Factory Rich Cake | Barley Wholewheat Flour Chocolate Cake
A super chocolaty super "Rich Chocolate Cake" , every mouthful is a bite of heaven. A wholewheat and barley flour based cake for every chocolate lover.
Prepare an 8 inch round or square cake tin, grease and line it with parchment paper(Parchment paper is a must since we are using a lot of ingredients which tend to stick to the tin otherwise).
Sieve the two flours along with baking powder,soda,cocoa powder,salt,cinnamon,clove and ginger powder atleast 3-5 times. Keep it aside.
Preheat the oven at 170 degrees for 10 minutes.
Take the pieces of one bar of chocolate along with butter in an oven safe bowl and keep it in the oven for melting while it is being preheated.
Once melted, remove from the oven, add coffee powder and stir the butter,chocolate mixture to get a smooth sauce.We need to use it warm.
Beat the 3 eggs along with vanilla extract at high speed for about 8-10 minutes until the volume doubles and you get a fluffy,creamy texture(I have used an electric hand mixer).
Add sugar to this and beat for another two minutes.
Add the warm chocolate butter mixture and beat on low speed just to blend them gently.
To this you need to add the flour and the wet ingredients in batches.
First add the first batch of sieved flour mixture, whisk well and then add coconut milk,beat the batter gently.
Now add the second batch of flour, add hot water(1/4 cup at a time) and continue to beat(on low speed recommended).
Add the final batch of flour and whisk everything until well blended.
Now add a tablespoon of lime juice or vinegar and gently whisk(lime juice/vinegar acts with baking soda to give a good rise to the cake).
Now fold in 1/2 of the chopped nuts,raisins and choco chips gently into the batter. Do not over mix.
Pour half of the batter into the prepared cake tin and tap the tin a couple of times for the batter to spread evenly.
Now sprinkle half of the dark chocolate pieces over this along with some chocolate chips and chopped nuts.
Pour the remaining batter on top of it and tap the tin two times again for the batter to spread evenly.
Now sprinkle the remaining nuts, chocolate pieces and chocochips as the final layer of this cake.
Bake the cake at 170 degrees for 30-35 minutes or until the toothpick inserted at the center comes out clean or with crumbs.(Do not open the oven door until a minimum of 20 minutes into the bake time for a toothpick test).
Let the cake cool in the oven itself for about 10 minutes before transferring it onto a wire rack for complete cooling. When you eat this cake warm, you get the choco lava feeling of the melted chocolate pieces with each bite.
You want to get to a nirvana state ? Then pour some dark chocolate ganache over the cake before you relish!
