I simply could not resist trying this S’mores brownie recipe when I came across a video of something similar this morning. What’s not to love? This has got a bit of everything a hearty dessert needs -A layer of crunchy cookie, topped with fudgy chocolate brownie and gooey marshmallow .
The cookie dough in my fridge and the packet of vegetarian marshmallows Akshatha got me were dying to be used. And what better than these S’more Brownies! You know what’s fantastic about this recipe? You can use any cookie dough and any brownie recipe for this. It is also a fab way to use left over cookies and biscuits.
I had some wholewheat butter cookie dough and I used my super easy eggfree wholewheat brownie recipe for this. The S’mores brownie tastes a lot like a brookie or a combination of a cookie and brownie topped with toasted marshmallows. I love how the baked marshmallows turn crispy on the outside and gooey on the inside.
Let’s not wait and get baking right away-
S'Mores Brownie- Eggfree and Whole wheat
3 layers of yumminess- buttery whole wheat cookie topped with fudgy chocolate brownie and gooey marshmallows.
For the brownies
Sift the flour, baking powder, cocoa powder and powdered sugar together.
Mix the ingredients until just combined.
Pour the brownie batter on the cookie dough base.
Pre heat the oven at 180 degrees for 10 minutes.
Arrange the large marshmallows carefully on the brownie batter.
Bake the S'mores brownie cake for 25-30 minutes at 175 degrees C or until a skewer inserted comes out clean. The marshmallows will fluff up and turn a lovely shade of brown.
Allow to cool for 10 minutes and carefully 'pick up' the brownie cake with the help of the parchment.
Allow to cool for 15 minutes before slicing into neat squares.
Your S'more Brownies are ready to be served.
Oven temperature and time may vary. Bake until the marshmallows turn a light shade of brown and a skewer inserted in the brownie layer comes out clean.
You may use any cookie and brownie recipe of your choice for this recipe.
I have used store bought veg marshmallows for this recipe. You can make your own or buy ready made ones from the market.
You can also add chocolate chips, crunchy nuts and raisins to your cookie dough and brownie batter.
