Three Grain Orange Cake

My orange powder and candied orange peel are ready . So this became an obvious choice. This one is adapted from the vegan orange cake recipe from the blog -Ambrosia Soulful Cooking. I made a few changes to make a healthy wholesome cake by including jowar flour, bajra flour and whole wheat flour. The orange juice and zest got replaced by my homemade candied orange peel and powder. The combi is deadly, and my home smells like an orange orchard. Oh! and you shouldn’t miss the lovely brown crust. I kept the proportion of the wet and dry ingredients similar to the original recipe. The texture of the cake turned out perfect and you can feel the sweet oranges in every single bite.

  1. Sieve the 3 flours, baking powder, baking soda and salt together 4-5 times.
  2. Mix in the candied peel into the sieved flour and set aside.
  3. Preheat the oven at 180 degrees for 10 minutes.
  4. Grease a 6 inch baking dish and set aside.
  5. In a large bowl mix the curd and sugar until the sugar dissolves.
  6. Add the oil, vanilla essence, vinegar and warm water. Beat until well combined.
  7. Mix the orange crush and orange powder and add it to the above. Give it a mix.
  8. Add the sieved dry ingredients and fold in gently until just combined. Do not over mix.
  9. Pour into greased baking dish and bake at 170 degrees for 35-40 minutes. Check for the edges to leave the tin and the top to get a lovely brown colour.
  10. Allow to stay in the oven for 10 minutes.
  11. Cool for 15 minutes and unmold. Allow to cool completely on a cooling rack before slicing.

Notes-

You can replace the orange powder, orange crush and hot water with 1/2 cup of orange juice.

The candied orange peels can be replaced with zest of one orange.

If you can wait up, try slicing the cake the next day. That way you would get clean slices and the flavour is more pronounced. But if you are like me and want to gobble it immediately, wait up till it cools completely.

Oven time and temperature may vary. Check on your cake after 30 minutes.
