Vegetable Poha made with beaten/ flattened rice flakes and an assortment of veggies is a perfect ‘one-pot’ meal to start your day.
More often than not, mornings are a total rush. This is one of my go-to recipes when I am short on time. A lovely blend of vegetables and poha/ flattened rice, that is ready in a jiffy.
It is also a healthy option for your kid’s snack box . I also like to have this light wholesome dish for my mid-morning/ early -evening snack . Load it with your favourite veggies and serve it with a cup of curd. Healthy and tasty!

Vegetable poha made with beaten/ flattened rice flakes and an assortment of veggies is a perfect 'one-pot' meal to start your day.
Wash the poha and drain the water. [Place the washed poha in a sieve . This helps to drain the excess water completely]
Add the curd and gently mix with your fingers. Set aside.
Heat the oil in a thick bottomed pan / kadhai .
Add the cumin seeds, mustard seeds, curry leaves, slit green chilli and asafoetida.
Once the mustard splutters, add all the veggies. Stir fry for a minute.
Add the turmeric powder and salt. Mix and cover the pan with a lid. Cook the vegetables on a medium heat.
Stir occasionally to check on the veggies.
Once the potatoes turn soft add the poha. [if the poha grains are stuck to each other , separate them with a fork or with your fingers, before adding it into the pan]
Mix the poha and veggies well and cook for a minute. Turn off the heat and close with a lid.
After 5 minutes, sprinkle the lemon juice and give it a mix.
Garnish with chopped coriander and serve .
Keep the poha in a sieve until use. This helps to make sure that it doesn't turn soggy.
The curd helps to give a tangy flavour and also makes sure that the flattened rice doesn't turn dry.
