It’s Aardra’s third birthday and I woke up all excited to bake her favourite chocolate cake. I had these yummy chocolate bars from our recent trip to Coorg that I was waiting to put to good use. I keep planning as the work proceeds so, by the time the cake came out I decided on cake pops, that she can carry to school. [ Oh if you are thinking about the cake I planned ,she’s getting that too]

These are yummy .. {how I decided that, is by the fact that my hubby requested for the same, for his friends at work}

Dark chocolate can never go wrong. These rich dark chocolate cakepops dipped in white chocolate are perfect for any occasion
Instructions
  1. In a double boiler melt the dark chocolate.
  2. Meanwhile sift the flour, baking powder, baking soda and salt together.
  3. Add the butter to the melted chocolate and beat well.
  4. Add in the powdered sugar and mix.
  5. To the above gradually pour in the milk and beat well.
  6. Mix in the vanilla essence.
  7. At this stage preheat the oven at 180 degrees for 10 mins.
  8. Pour the prepared wet ingredient mix into the sifted flour. Combine until no lumps are left. Beat this for about 30 secs using an egg beater.
  9. Pour into a greased baking dish.
  10. Bake in a preheated oven at 180 degrees for 30 mins { or until the sides of the cake start to leave the tin}
  11. Allow to cool for ten minutes before demoulding.
  12. After demoulding crumble the entire cake and make lemon sized balls. Set aside.
  13. Melt the white chocolate in a double boiler. Dip the cake pops in it or alternatively arrange them on a tray and pour the melted white chocolate over them.
  14. Cover with a cling film and refrigerate for half an hour.

Recipe Notes

Oven time and temperature may vary. The cake is done once the sides start to leave the tin or the skewer comes out clean when inserted in the center of the cake.

If you are in a hurry you can also keep the cake pops in the freezer compartment for 15 mins and then enjoy eating them.

For melting the chocolate- In a large vessel boil some water and then place a smaller vessel with the chunks of chocolate in it, taking care that the water doesn't enter it. Use a spoon or spatula to give it a mix now and then till it melts completely.
