Whole Wheat Herb And Onion Bread

Bread baking is a world in itself. I find it super exciting .Last night i wanted to bake a healthy bread with absolutely no all purpose flour. What i had in mind was masala buns and a caramelized onion bread that i recently tasted. This bread is a delicious blend of oregano, basil , parsley and crispy fried onions. The texture is simply amazing, something  i crossed my fingers for ,specially since it is whole wheat. Serve it with a hot cup of coffee or make it even more interesting with melted bubbly cheese on top. Perfect evening snack i would say.

Instructions
  1. In a large bowl mix the flour, mashed potato, salt, dried herbs, 2 tsps of olive oil and 1 tsp of sugar until uniformly combined.
  2. Mix 1/4 cup of warm water, yeast and 1 tsp of sugar in a glass. Set it aside for 10 minutes , to activate the yeast. The mixture should get frothy on top. [ You will also get a pleasant fruity alcoholic smell. A description often used in chemistry labs]
  3. Add the frothy yeast to the dry mix prepared in step 1.
  4. Combine into a soft dough adding warm water, a little at a time.
  5. Add 1 tsp of olive oil and gently knead for 10 minutes, on a lightly floured surface. Make a loose ball of dough once it turns smooth and pliable.
  6. Grease a large bowl and place the kneaded dough in it. Grease the top of the dough too. [ or just roll in in the bowl so that it gets evenly greased all over.]
  7. Cover the bowl with a damp kitchen towel and keep it in a warm place, undisturbed, for 2 hours.
  8. Slice the onions and fry them until they are brown and crisp.
  9. After 2 hours, punch down or deflate the dough. Divide it into two parts [ one slightly larger than the other].
  10. On a lightly floured surface, pat down the larger portion of the dough into a thick circle [ about 5-6 inches in diameter ] .
  11. Arrange half of the crispy onions on the patted dough.
  12. Pat down the other portion of dough similarly and place it over the onions.
  13. Seal the edges. Add the rest of the fried onions over it and gently press it down.
  14. Place the prepared dough in a greased baking dish.
  15. Cover with a damp cloth and allow to rise for about half an hour.
  16. Pre heat the oven at 180 degrees for 10 minutes.
  17. Brush the top of the dough with milk and place the baking dish in the middle rack of the preheated oven.
  18. Bake at 180 degrees for 30 minutes.
  19. Brush the top generously with butter and bake again at 180 degrees for 10 minutes.
  20. Remove from the oven and after 5 minutes transfer the bread onto a cooling rack.
  21. Allow to cool completely before slicing.
Recipe Notes

Notes-

I used a silicon spatula to combine the wet and dry ingredients. This made it less messy and easier to handle the dough. You can use a plastic spatula or scraper too.

Add the water a little at a time, to get the right consistency of the dough.

Use warm water only. This helps the yeast work its way. If the water is cold or at room temperature the yeast wont get activated and if too hot it will die.

I have used instant dry yeast, that can be directly added to the dough and mixed. But i find activating it a better method. If you are using active dry yeast , then you have to follow the steps, as it is.

If you are using active dry yeast and the mixture doesn't get frothy after 10-15 minutes , you will have to discard the mixture. The temperature of the water and the quality of yeast are a key in this step.

Handle the dough gently. Do not knead too hard.

You can double the ingredients and prepare a small loaf too. [ i plan to do that next time].

Cut and slice only once the bread is cooled completely.

I made this for my kids and so din't add anything spicy in the bread. You can add chilli flakes or other herbs and experiment.
